Turmeric Coconut Chicken Curry

Turmeric Coconut Chicken Curry
serves 6

Saute in a large pot for 5 minutes:
2 tbsp. olive oil
1 medium red onion, diced
2 inches fresh ginger, minced
3 cloves garlic, minced

Add and bloom for 2 minutes:
1.5 tsp. turmeric
1/2 tsp. cumin
1/2 tsp. cinnamon
1/4 tsp. crushed red pepper flakes

Add and saute until sealed, 5-7 min:
2 lb. chicken, diced

Add and simmer, covered, for 30 minutes:
1 15-oz. can of tomatoes, drained thoroughly
1 bay leaf
1/2 tsp. salt

On the side, combine:
1 13-oz. can coconut milk
1 tbsp. cornstarch

Stir the coconut milk mixture into the curry over medium heat, until the sauce begins to thicken. Season with salt and pepper to taste. Sprinkle fresh cilantro on top if desired.
